Smoky chilli-honey yogurt sauce
A creamy, smoky-sweet orange drizzle of yogurt, a flame-charred dried red chilli, chilli garlic sauce, honey and a touch of mayo, blended until smooth. It is what makes the taco bowl and quesadilla craveable.

Method
Hold 1 whole dried red chilli with tongs over the gas flame 5-10 s until it darkens and smells smoky; crush it (seeds out for less heat).
Put it and everything else in a blender jar or bowl.
Blend or whisk hard 1 min until completely smooth and pale orange.
Taste: a drop more honey if too sharp, a pinch of chilli if too mild.

Why it tastes good: Blending makes it thick and creamy; stirred by hand it stays thin.
