Method

  1. Hang the yogurt in a clean cloth or sieve 10 min to thicken.

  2. Crush the garlic with the salt into a paste.

  3. Whisk the garlic paste and lemon, then add the yogurt a spoon at a time, whisking 1 min until thick and glossy.

Why it tastes good: Adding the yogurt slowly while whisking keeps it thick like the shawarma-shop sauce.
