Fresh mint, coriander, green chilli, garlic and lemon pounded into thick yogurt: bright, cooling and the classic partner for anything off a grill.

Method

  1. Friday night: blend or pound the mint, coriander, chilli, garlic, lemon, cumin and salt with 1 tbsp of the yogurt to a paste.

  2. Stir in the rest of the yogurt, lid on, fridge overnight.

Why it tastes good: Blend the herbs with a spoon of yogurt, not water, so the chutney stays thick and bright green.
