Egg, bean and cheese breakfast burrito
Four soft-scrambled eggs, mashed kidney beans and melted mozzarella rolled in a large tortilla, frozen at the weekend, steamed hot under a lid and crisped in a dry pan. A grab-and-go breakfast with 33 g of protein.

Method
Sunday cook-up: whisk the eggs with salt and pepper. Mash the boiled beans with cumin and chilli powder.
Non-stick pan on medium-low: oil, onion, tomato and chilli 2 min; pour in the eggs and stir slowly 2 min until just set but still glossy. Tip onto a plate to cool.
Warm the tortilla 10 s per side on the dry pan so it folds without cracking.
Spread the beans down the middle, add the egg and cheese, fold in the sides and roll tight; seal seam-side down 1 min in the dry pan.
Cool 20 min, wrap in foil, bag flat and freeze.
Friday night: move to the fridge.
Saturday: unwrap, put it on the pan on medium-low with 1 tbsp water beside it and cover at once; 4-5 min per side until the middle is steaming hot, then lid off, 1 min per side in the dry pan until the tortilla is crisp.

Why it tastes good: Take the eggs off while they still look slightly wet: they finish cooking when the burrito is reheated, so they stay soft instead of rubbery.
