Cardamom French toast
A thick slice of bread soaked briefly in a four-egg cardamom custard and pan-fried golden, with the leftover egg set into a soft folded omelette on top. Lightly sweet and cardamom-scented, 25 g of protein.

Ingredients

Method
Whisk the eggs, milk, sugar, crushed cardamom and a tiny pinch of salt on a wide plate for 30 s.
Heat the pan on medium-low 1 min with the oil and spread it with a spatula.
Dip the slice 5 s per side, let it drip and lay it on one side of the pan.
Pour the leftover egg into the free side of the pan; it sets into a thin omelette.
Cook 2-3 min until golden underneath, flip toast and omelette, 2 min more until no wet egg shows when you press the middle.
Cut the toast into two triangles, fold the omelette beside them and eat hot.

Why it tastes good: A 5-second dip keeps the bread from going soggy; the extra egg poured around it is where most of the protein is.
