Banana oat pancakes
Flourless pancakes blended from oats, banana, yogurt and three eggs, cooked small on a lightly oiled pan and finished with a thin drizzle of honey. Naturally sweet, no syrup needed.

Method
Blend the oats in the chopper 20 s to a coarse flour.
Add banana, eggs, yogurt, baking powder, cinnamon and salt; blend 20 s until smooth (or mash the banana and whisk everything with a fork).
Rest the batter 3 min so the oats thicken it.
Heat the pan on medium-low 1 min and wipe the oil over it with a folded paper towel.
Pour 3 tbsp of batter per pancake, 3 at a time; cook 2 min until bubbles appear and the edges look dry.
Flip and cook 1-1.5 min more; repeat with the rest (wipe the same paper towel over the pan between batches).
Stack and drizzle the honey over the top.

Why it tastes good: Keep the heat at medium-low: banana batter burns before the middle sets on a hot pan.
